3 HEALTHY LUNCH IDEAS FOR BACK TO SCHOOL I NEON DOTS

Hey neonators, it's neon dots here. I know that you guys are heading back to school soon, and personally, I hate the lunches that my school provides. I want you guys to have delicious, easy to make, healthy meals for you guys to eat for lunch, so I thought I would share with you guys three lunch ideas for back to school, so let's get started!

1) HONEY SESAME CHICKEN



•1 lb boneless chicken breast, cut into 1 inch cubes
•2 garlic, minced
•Toasted sesame seeds

Frying Batter:

•1 egg white
•1/2 cup all purpose flour, sifted
•1/4 cub cornstarch
•1/2 teaspoon baking powder
•1/2 cup water, cold
•1 tablespoon oil
•Salt

Sauce"

•1/3 cup pure honey
•1 teaspoon apple cider vinegar
•1/2 tablespoon ketchup
•1 teaspoon sesame oil
•1 tablespoon corn starch
•1/2 cup water
•1 teaspoon salt

1) Whisk all the frying batter ingredients together in a bowl until smooth, and set aside. Drop the chicken cubes in the mixture, and mix them together until they are all coated. Set that aside.

2) Mix all the ingredients for the sauce together in another bowl and set aside.

3) Heat up a saute pan and add around 2 inches of oil on medium high heat. When the oil is fully heated, gently drop in the battered chicken cubes, one by one. Make sure it spreads out to prevent sticking together. Continue to fry until the color changes to golden brown. Take them out and drain them on paper towels.

4) Transfer 2 tablespoons of the frying oil in a skillet, and stir fry the garlic until aromatic. Add in the sauce, and bring it to a light simmer, or until the sauce thickens. Drop in the chicken, stir  fry a few times to combine the sauce and chicken, add in the sesame seeds, dish out and serve while hot.

I would eat this with rice and steamed veggies on the side. Because this takes a longer time to make, I would make this the night before and put it in a container in the fridge if you do not have enough time in the morning.

2) NEON DOTS' SPRING/SUMMER SALAD

I don't have a picture, however, I make this bomb salad that is really delicious and healthy for you. If you want to learn how to make this, I will link it down below. It includes nutritious ingredients that are really healthy for you, such as strawberries, almond slices, and more. I would eat this salad with some crackers and cheese, or fruit. It is pretty filling as is, but it also depends on how big the portion is while you make it. I would make a rather larger salad, and split them into two containers so you can have it for two days!

3) ACAI BOWL



I love acai bowls because they are extremely delicious and good for you. You can customize it by adding your favorite fruits. There are also places that make them for you, but if you want to make your own, keep on reading.

•2 Sambazon acai smoothie packs (unsweetened)
•1 banana
•1 cup blueberries (you can substitute it for raspberries or quartered strawberries)
•1 cup coconut water
•1/2 cup almond milk (unsweetened)
•1 tablespoon maca powder (optional)
•1-3 tablespoons chia seeds or flaxseeds (I like to add these, but again, it's optional)

Toppings:

•1/2 cup granola
•1/2 cup banana slices
•1/4 cup blueberries, raspberries, or quartered strawberries
•1/4 cup shredded coconut
•1 tablespoon agave nectar

1) Break frozen acai into chunks and place in a blender. Add your banana, blueberries (or whatever other fruits you may have substituted it for), coconut water, and your almond milk, and blend it all together.

2) Place your toppings on top. You can design them to go around your container or bowl, place the ingredients in rows, or just sprinkle them on top if you don't care too much about the order of them. Drizzle with agave nectar.

Keep in mind that if you have any allergies, you can always search up alternatives for some of these ingredients. This doesn't take too much time. If you have some time in the morning, this makes a great breakfast or lunch. You can place it in a container, and bring it with you to school. I would make this on a colder day because the colder it is, the better. You can also put ice packs in your lunch box to keep it cool as well.
